Margarita Ice Pops

As summer approaches, it's time for some frosty treats to cool off the hot days and nights. That's why the Margarita Ice Pops make such a great treat and they couldn't be easier to make. Check out the Easy recipe below and the Even Easier recipe below that.

Option 1 (Easy)

Ingredients
3/4 cup sugar
3/4 cup fresh lime juice
1/2 cup water
2 tablespoons fresh lemon juice
2 tablespoons fresh orange juice
2 tablespoons tequila
2 tablespoons orange liqueur (recommended: Grand Marnier)
Kosher salt, for garnish

Equipment
4 small paper cups
Popsicle sticks (available at most craft stores)
Microwave-safe bowl
Microwave
Freezer

Heat the water in the microwave until it comes to a boil then dissolve the sugar, lime juice, lemon juice and orange juice in the hot water. If the sugar does not fully dissolve and the water starts to cool, heat the water again but don't let it come to a full boil. Allow the mixture to cool then add the tequila and orange liquor. The recipe doesn't call for much alcohol but don't try to modify the recipe to make it stronger or your Popsicles won't freeze!
Pour the mixture into the paper cups and place the popsicle sticks upright in the liquid. Freeze until hard, preferably overnight. When you're ready to serve, remove the cups from the freezer and carefully peel off the paper cup. Sprinkle some salt lightly over the treat for a perfect Margarita Popsicle!

Option 2 (Even easier!)
You can't get any easier than this delicious snack:

Ingredients
1/2 cup tequila
6 tablespoons fresh lime juice
1/4 cup coarse kosher salt
6 frozen lime-flavored ice pops or fruit bars, unwrapped

Equipment
Bowl

Combine the tequila and lime juice in the bowl then dip the store-bought ice pops in the mixture. Lightly garnish with salt and enjoy!
